1 (1oz) pkg ranch dressing mix
2 cups mayo
3/4 cup chopped green onion
1lb bacon slices
5lbs unpeeled red potatoes
Boil WHOLE potatoes for about 15-20min. Drain potatoes and chill in fridge for 2hrs.
In a bowl, stir ranch mix, mayo and onion. Refrigerate with potatoes for 2hrs.
Cook up bacon. Let sit and cool.
Chop up chilled potatoes to desired sizes. Mix the chunks in with the mayo mixture. Crumble in bacon.
