Sun-Dried Tomato and Basil Pinwheels by Minimalist Baker

-8oz cream cheese
-1/2 cup lightly packed (50 g) sun-dried tomatoes (dry, not in oil), chopped (plus more for topping)
-1/4 cup lightly packed (45 g) frozen spinach, thawed and squeezed dry
-2 large cloves garlic, minced (~2 Tbsp, 12 g)
-1/4 cup parmesan cheese
-Pinch each sea salt and black pepper
-2 large flour tortillas
-24 fresh basil leaves, divided

Step One:
"Add cream cheese, sun-dried tomatoes, spinach, garlic, parmesan cheese, salt, and pepper to a mixing bowl and mix thoroughly to combine."

Step Two:
"Divide filling between two flour tortillas and spread into an even layer all the way to the edge. Top each with 10-12 fresh basil leaves (leaving one edge bare so the tortilla can stick to itself). Press basil down slightly to adhere."

Step Three:
"Tightly roll up tortillas from one end to another, starting from the end with basil all the way to the edge, working toward the end that's slightly bare."

Step Four:
"Once rolled up, squeeze gently to compact everything and lay seam-side down for slicing."

Step Five:
"Use a serrated knife to gently cut tortillas into 1/2-inch slices. Between the two tortillas, you should have a total of 20-22 pinwheels."

Step Six:
"Arrange on a serving platter and serve immediately, or chill for up to 24 hours, covered in the fridge. Leftovers keep well in the refrigerator, covered, for 2-3 days, though best when fresh."

5 Ingredient Blueberry Skillet Dump Cake by Sweet Phi

-1 cup flour
-1 cup sugar
-1 cup milk
-1/2 cup butter
-1 pint blueberries

Step One:
Preheat oven to 375. Grease a bake safe skillet and set aside.

Step Two:
Combine melted butter, flour, sugar and milk in a bowl. Whisk together. Pour into skillet.

Step Three:
Sprinkle blueberries over top of mixture in skillet. Place in oven for 40-45minues.

Step Four:
Cool and serve!

Snack Like a Southerner: Pesto & Turkey Cucumber Roll Ups

Pesto & Turkey Cucumber Roll Ups by Ambitious Kitchen


-3 medium cucumbers (each will yield about 6 slices)
-¼ cup store-bought basil pesto
-6 slices GO Veggie Lactose & Soy Free Mozzarella Slices
-6 oz deli smoked turkey breast, shredded
-1 bell pepper, thinly sliced into matchsticks
-1/2 cup spinach, shredded
-salt and pepper, for seasoning

Step One:
Slice the cucumbers lengthwise on a mandoline at about a 2mm setting. If you don’t have a mandoline, you can always use a vegetable peeler. Place the cucumber slices on parchment paper and pat dry with a paper towel

Step Two:
Spread about 1 teaspoon of pesto on each cucumber, then evenly distribute cheese, turkey, bell pepper and spinach on each.

Step Three:
Sprinkle with a little salt and black pepper. Roll up and place seam down. 


Snack Like a Southerner: Red, White and Blue Chex Mix

Red, White and Blue Chex Mix

3tbsp butter
1tbsp Worcestershire sauce
3/4tsp salt
1/4tsp garlic powder
1/4tsp onion powder
4 1/2 cups Chex
2 cups pretzels
2 cups mini marshmallows
1 cup red and blue chocolate candy
1 pound white almond bark

Step One:
"In large microwavable bowl, microwave butter uncovered on High about 30 seconds or until melted."

Step Two:
"Stir in seasonings. Gradually stir in cereal and pretzels until coated."

Step Three:
"Microwave uncovered on High 4 to 5 minutes, thoroughly stirring every 2 minutes. Spread on paper towels to cool, about 15 minutes."

Step Four:
"Stir in mini marshmallows and chocolate candies, and toss to combine."

Step Five:
"Divide the prepared Chex Mix™ into three even portions, and spread each portion in an even layer on a foil-lined plate or baking tray."

Step Six:
"Heat the almond bark in the microwave or in a double boiler until melted. Divide the almond bark into three equal servings. Color one serving with red gel food coloring. Color the second serving with blue gel food coloring. Then leave the third serving plain (white)."

Step Seven:
"Drizzle each portion of Chex Mix™ with one color of chocolate. Then let cool for at least 15 minutes, or until the chocolate returns to room temperature."

Step Eight:
"When it's ready, toss together the three colors of Chex Mix™ until combined, and serve."
