2 cups sugar
1/2 tsp salt
2 1/4 cups flour
1 1/3 tsp baking soda
1 cup chopped pecans or walnuts
3/4 cup vegetable
1 tsp vanilla extract
1/4 cup buttermilk
Preheat Oven to 350°. You'll need 2 loaf pans for this, grease them with butter or pam. In a large bowl, MASH THEM BANANAS. You can use practically anything for this from a wand to a hand to a meat tenderizer, just get 'em mashed.
In another large bowl, pour in the buttermilk and baking soda. THIS WILL FOAM A BIT. Add the remaining ingredients, including the banana, mix well. Pour batter into pans.
Bake for an hour. After your timer is up, stick a toothpick in the top of the loaf. You want the toothpick to come out ALMOST clean. If it comes out totally clean, you'll have a dryer loaf but that's not terrible.
