Here are five amazing meals that you can get out of ONE chicken.
Now, you can do this a few different ways:
1. Go to Costco or the local grocery store and purchase a rotisserie chicken.
2. Purchase a chicken to bake yourself (this way you have more control over what the chicken is or is not seasoned with.)
3. Purchase parts of the chicken to your preference. Some people abhor dark meat, so why pay for an entire chicken if you're going to be tossing most of the chicken away and vice versa. Purchase breasts, fillets, thighs to you and your family's preference.
Now, the idea to these recipes is that you can use the chicken to make one of these meals, or all five using only one chicken. The latter saves time and money, as well as provides a variety of meals that you can enjoy throughout the week.
Meal One: The Classic
The classic roasted chicken dinner with roasted vegetables and stuffing.
-Chicken (pre made rotisserie or raw)
-5 carrots (or a half bag of baby carrots)
-2 large potatoes
-1/4 cup olive oil
-Stuffing bread crumbs
-12oz chicken broth
-1 can cream of chicken
-1 1/2 cups butter
-Chopped onion (dried from spice aisle)
Now, if you choose to cook your own chicken, here is a fast and easy way to do so:
-Make a rub (combine 4 tbsp melted butter, 1/4 cup olive oil, salt, pepper, garlic powder)
-Rub chicken down all over
-Pour any excess rub over top of chicken
-Place chicken in roasting dish
Slice your vegetables. Slice large carrots into discs, cut baby carrots in half, chunk the potatoes (you can keep the skin on depending on preference, but I recommend it.)
In a large Ziploc baggie, dump in chopped vegetables. Add olive oil, salt, pepper and garlic powder. Zip and shake!
Pour vegetable mixture into the roasting dish with the chicken (if you are roasting the chicken) and bake for duration of the chicken. If the chicken is already prepared, roast vegetables in a pan for 45 minutes at 365.
Chop up apple.
Melt butter in a large pot. Add garlic powder, minced onion, salt, peper and apple. Simmer for about five minutes over medium heat.
Add cream of chicken and broth. Stir. Simmer for another three minutes.
Take off heat and add the stuffing bread crumbs. Stir around. Add some milk or more butter if you feel the stuffing isn't "creamy" enough.
Meal Two: Chicken of the Sea-sar Salad
-Can of tuna fish (water not oil)
-5tbsp Creamy Caesar dressing
-5 grape tomatoes
-Shredded parmesan cheese
-Garlic and cheese croutons
Dump canned tuna fish into a large bowl. Add dressing and stir. The tuna should be a little runny. Set aside in refrigerator.
Slice up the chicken and halve the tomatoes.
In a large bowl, add lettuce, chicken, tomatoes, cheese, croutons and tuna. Mix! (the tuna mixture acts as dressing)
Meal Three: Fiesta Chicken
-Chicken (white or dark)
-1 8oz. block of cream cheese
-Shredded cheddar cheese
-Tortillas or tortilla chips
Cut up chicken into chunks.
In large pan with a little bit of butter or water, cook up chicken with the taco seasoning.
Dump chicken chunks into food processor and grind up.
In a large bowl, soften cream cheese. Add chicken and salsa. Combine until it has a chicken salad texture. (It might be best to use a hand mixer, but you can also use a rubber spatula)
Add chicken spread onto a tortilla or chip with cheese and sour cream. Enjoy!
Meal Four: Fried Chicken
Pretty ingenious to make fried chicken with chicken that is already cooked.
-Dark meat (the juiciest)
-Oil for frying
Chunk or piece out your meat.
Combine bread crumbs, cheese, salt and pepper in a bowl.
Dunk the chicken pieces in the egg.
Coat pieces in the breadcrumb mixture.
Fry in pan, about a minute or so on each side.
Meal Five: Chicken Soup
-2 stalks of celery
-1qt chicken broth
-1 can cream of chicken
In a large pot, place carcass, skin, cream of chicken and broth inside. Simmer for 35 minutes.
Cut up vegetables and chicken.
In a pan, melt butter. Sauté onions for about two minutes over medium heat.
Add carrots and celery to the pan. Sauté for five minutes.
Add chicken, potato and sautéed vegetables to pot of broth. Cook on medium low heat for two hours.
