Snack Like a Southerner: Springtime Cobb Salad

Ingredients:

Salad-
4 to 6 slices bacon
12 asparagus spears, woody stems removed
1 head butter lettuce, leaves removed
1/2 cup marinated artichoke hearts
4 radishes, thinly sliced
2 large eggs, hard boiled and sliced
1 avocado, sliced
4 ounces gorgonzola cheese, crumbled
Crispy Garlic Chickpeas-
1 (14-ounce) can chickpeas, drained, rinsed and patted dry
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon pepper
Honey Lemon Vinaigrette-  
1/4 cup apple cider vinegar
3 tablespoons lemon juice
2 tablespoons honey
2 garlic cloves, finely minced or pressed
1/4 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup extra virgin olive oil

Step One:
"Heat a large skillet over medium-low heat and add the bacon. Cook until crispy and until the fat is rendered, then place the bacon on a paper towel to drain any excess grease. Remove all but 1 tablespoon of the bacon fat from the skillet."

Step Two:
"Add the asparagus to the skillet and toss to coat. Season it with a bit of pepper and cook until slightly tender but a crispy remains, about 3 to 4 minutes."

Step Three:
"Preheat oven to 425. Place the chickpeas on baking sheet and drizzle with olive oil. Season with garlic, paprika, salt and pepper, tossing to coat well. Roast for 15 minutes. Shake around. Roast for another 15-20 minutes."

Step Four:
"In a bowl, whisk together the vinegar, lemon juice, honey, garlic, basil, salt and pepper. Continue to whisk while streaming in the olive oil. This dressing stays great in the fridge in a sealed container for a week or so, so feel free to make a double batch if desired!"

Step Five:
"Build your salad! You can chop your lettuce if desired, but I love the pieces of butter lettuce and how soft they are. Season your lettuce with some salt and pepper, this is key. Add your bacon (crumbled or strips, whatever you prefer), asparagus, artichokes, radish, eggs, avocado and chickpeas. Drizzle on your dressing and finish with crumbles of gorgonzola."

Snack Like a Southerner: Texas Sheet Cake

Ingredients:
Cake-
-2 cups flour
-2 cups sugar
-1tsp baking soda
-1 cup butter
-1 cup water
-1/2tsp salt 
-1/2 cup sour cream
-2 eggs
-5tbsp unsweetened cocoa powder

Icing-
-5tbsp unsweetened cocoa powder
-1/2 cup butter
-4 cups confectioner's sugar
-1tsp vanilla extract
-6tbsp milk

  1. "Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch pan."
  2. "Combine the flour, sugar, baking soda and salt. Beat in the sour cream and eggs. Set aside. Melt the butter on low in a saucepan, add the water and 5 tablespoons cocoa. Bring mixture to a boil then remove from heat. Allow to cool slightly, then stir cocoa mixture into the egg mixture, mixing until blended."
  3. "Pour batter into prepared pan. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean."
  4. "For the icing: In a large saucepan, combine the milk, 5 tablespoons cocoa and 1/2 cup butter. Bring to a boil, then remove from heat. Stir in the confectioners' sugar and vanilla, then fold in the nuts, mixing until blended. Spread frosting over warm cake." (all recipes)

Cheese Straws are delectable and great for parties or even to give as a gift. They are sharp and delicious!

Ingredients:
1 1/2cups flour
1/2tsp fine sea salt
Pinch cayenne pepper
1/2lb sharp cheddar cheese freshly grated
1/2cup (one stick) unsalted butter

Step One:
Preheat oven to 375. Pam two baking sheets.

Step Two:
In a small bowl, combine flour salt and cayenne. 

Step Three: 
"In a heavy-duty mixer fitted with the paddle, cream the cheese and butter at a medium speed until smooth and well combined. Gradually add the flour mixture. Mix on low speed until smooth. (The dough can also be made in the bowl of a large food processor: grate the cheese with the grating blade, then transfer the cheese to a bowl and insert the metal blade. Pulse the dry ingredients to combine, then add the butter and cheese. Process until smooth.) Cover the bowl with plastic wrap and set aside to rest for about 15 minutes."

Step Four:
Work the dough in your hands. Shape the dough into a cylinder and pack it into a cookie press fitted with the serrated ribbon disk.

Step Five:
"Holding the cookie press at an angle to one of the prepared baking sheets, press the trigger twice, dragging the press away to make a long straw the length of the baking sheet, spacing the ribbons of dough 1 inch apart. Using a butter knife or offset spatula, cut each ribbon into 1- to 2-inch pieces. Repeat with the remaining dough and the other baking sheet. (If the cookie press extrudes the dough in fits and spurts, simply pick up the dough and reuse.)"

Step Six:
"Bake for 10 minutes, then rotate the sheets. Bake for another 10 minutes. Remove the baking sheet to a rack to cool slightly. Using an offset or slotted spatula, remove the individual cheese straws to cool completely. Store at room temperature in an airtight container between sheets of waxed paper for up to 2 to 3 weeks."

Snack Like a Southerner: "White Trash Hotdogs" (Pigs in a Blanket)

My mom started calling Pigs in a Blanket "White Trash Hotdogs" a few Christmases ago when our oven broke just a few hours before we were going to have guests over for the big Christmas Eve bash. So, instead of using the oven, she was forced to use the toaster oven to make around 50 pigs in a blanket, white trash style.

Ingredients:
Crescent roll dough tube
Nathan's Hot Dogs or cocktail wieners
*Cheez Whiz (optional)

Step One:
Slice and dice! Open up your dough tube and roll out the dough. Remove the precut slices from one another. Then cut each piece in half. (If you chose to use hotdogs instead of cocktail wieners: slice the hotdog lengthwise in half, then dice into half inch chunks or how ever large you prefer)

Step Two:
Place a hotdog onto a slice of dough. If you want to add cheese, do so along the top of the hotdog now. Roll.

Step Three:
Place them onto a cookie sheet (I like to put tin foil down and then spray it with PAM to make sure that my pans stay clean and the pigs don't burn.) and bake!

Step Four:
Let cool, serve with some honey mustard and enjoy! 

 

Snack Like a Southerner: Pimiento Cheese Spread

This lovely pimiento cheese spread is excellent for parties and upcoming cookouts. Serve with pretzel thins or crackers and enjoy!

Ingredients:
1 small can of evaporated milk
1 jar Pimiento (chopped)
1/4tsp salt
8oz grated cheddar cheese
4oz shredded cheddar cheese
2tbsp Miracle Whip

Step One:
In a saucepan over medium heat, heat milk and grated cheese until smooth. 

Step Two:
Remove from heat. Add Pimiento and salt. Let cool.

Step Three:
Add Miracle Whip and shredded cheese, stir.

Step Four:
Chill for a bit and serve!

These ham roll ups are perfect for parties or for a small group of guests!

Ingredients:
Ham sandwich style slices
Green onion (finely chopped)
8oz. pckg cream cheese
1/2tsp garlic powder

Step One:
Soften cream cheese in microwave. Combine cream cheese and garlic powder.

Step Two:
Spread mixture on ham slices, sprinkle onions at the edge of each slice.

Step Three:
Roll, cut into half inch pieces and enjoy!

Ingredients:
6 large hard-boiled eggs
Salt
Black pepper
2tbsp Miracle Whip
1tsp yellow mustard
2tbsp sweet pickle relish

Step One:
Peel shells off cooled hard boiled eggs. Slice each egg into halves lengthwise.

Step Two:
Remove yolks from whites and place in a small round bowl. Mash yolks with a fork into fine pieces.

Step Three:
Add Miracle Whip, yellow mustard, relish, salt and pepper to yolk. Stir mixture until creamy.

Step Four:
Spoon mixture into a zip-lock bag. Seal and snip off one corner of the bag. Squeeze mixture from the bag into the egg halves.

Step Five:
Garnish with a bit of paprika and enjoy!
