Slow Cooker Apple Spice Cake


2 20oz cans apple pie filling
1 Box Spice Cake Mix
8 oz Butter

Step One: "Pour apple pie filling into slow cooker. Top with cake mix and butter."

Step Two: "Cook on high for 2-2.5 hours."

Step Three: Enjoy! Great with vanilla ice cream.

Snack Like a Southerner: No Bake Pumpkin Cheesecake Bars

No Bake Pumpkin Cheesecake Bars

1 ½ cups crushed graham crackers
2 tablespoons sugar
4 tablespoons butter, melted
8 oz. cream cheese, softened
1 can (14 oz.) pumpkin purée
½ cup white sugar
1 tub Cool Whip (8 oz.)
½ teaspoon pumpkin spice
1 teaspoon vanilla extract
1 envelope gelatin, dissolved in ½ cup water

Step One:
"Throw those graham crackers (about one sleeve’s worth) into a plastic bag, and crush them."

Step Two:
"In a large bowl, mix together the crushed grahams crackers, 2 tablespoons of sugar and a half stick of melted butter with a fork."

Step Three:
"Press the buttery graham cracker crumble into some sort of baking dish. I used an 11 x 7 inch dish, but you could honestly use just about anything— even a pie or cake tin would be fine."

Step Four:
"In a bowl, mix together the cream cheese, pumpkin purée, sugar, vanilla and pumpkin spice until well-combined."

Step Five: 
"Then, fold the tub of Cool Whip into the mixture and mix until combined."

Step Six:
"Dissolve your envelope of gelatin into ½ cup of hot water (you could steal some from your roommate’s Keurig) then mix into the cheesecake filling."

Step Seven:
"7. Spoon the cheesecake filling over the graham cracker crust and leave in the fridge for at least 3 hours before cutting the dessert into bars. Enjoy!"

Snack Like a Southerner: Homemade Snowballs



For the chocolate cake:

1 stick unsalted butter, softened
2 cups sugar
3 eggs
1 teaspoon vanilla extract
2 cups all purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1/3 cup cocoa powder
1 1/2 cups milk

For the filling/frosting:
6 room temperature egg whites
1 1/2 cups sugar
1 teaspoon cream of tartar
1/3 cup water
2 teaspoons vanilla extract
1 teaspoon coconut extract
2 cups shredded coconut
3 drops red food coloring

Chocolate Cake:

Step One:

"In a mixing bowl, cream the butter and sugar together, then add the eggs, one at a time, and the vanilla."

Step Two:

"In another bowl whisk the flour, cocoa, salt and baking soda. Add about half the dry ingredients to the butter/sugar mixture, pour in the milk, and then the rest of the flour mixture, until just combined."

Step Three:

"Ladle batter into greased muffin/cupcake tins and bake in a preheated oven at 350 for 15 minutes."

Step Four:

"Let cool completely before beginning the next step, which is to cut a cone out of the bottom of each cake. Trim (and discard, if you wish) the pointy end, leaving only a small circle to cap the cake once filled."


Step One:

"In the bowl of a stand mixer beat egg whites until soft peaks form."

Step Two:
"In a small saucepan, combine sugar, water and cream of tartar and bring to a boil. Remove from heat and cool until the syrup reaches 242 Farenheit."

Step Three:
"Slowly pour syrup into the egg whites, followed by the vanilla and coconut extracts. Whip for another ten minutes, until the mixture is thickened and room temperature. Meanwhile, process coconut until fine in a food processor, adding the food coloring, if desired."

Step Four:
"This goes in a shallow bowl for rolling/sprinkling the almost-finished product. Use a pastry bag (or Ziplock with the corner cut out) to fill each cupcake, and replace cake cap, leaving upside down for frosting. With a small spatula coat the sides and bottom with a light layer of frosting, then add the coconut sprinkles."


Snack Like a Southerner: Fireball Snickerdoodles

2 cups butter
2/3 cup powdered sugar
4 cups flour
1tbsp vanilla extract
1tbsp almond extract
1tbsp cinnamon
50mL Fireball Cinnamon Whiskey

Preheat oven to 325.

Step One:
Melt/soften butter.

Step Two:
In a large bowl, combine flour, sugar, extracts, cinnamon, Fireball and butter. Mix well.

Step Three:
Shape into balls and place onto a cookie sheet.

Step Four:
Bake for 18 minutes.

Snack Like a Southerner: Blueberry Tarts


1 sheet puff pastry, unthawed
8 ounces Cream Cheese, softened
1/2 tsp Vanilla
1/2 tsp Almond Extract
2-3 Tbsp Sugar
1 1/2 cup Blueberries, fresh or frozen
1 Egg, whisked
3 Tbsp Water
Powdered Sugar

Step One:
Preheat oven to 400 degrees. Line a baking sheet with parchment paper or a silicone baking sheet."

Step Two:
"On a lightly floured surface roll out thawed puff pastry into a 12x9" rectangle. Cut in half lengthwise, yielding 2 4-½" strips. Cut those two strips crosswise into thirds, to yield six 4x4 ½" pieces.
With a knife, score ½" border around the edge of each piece of puff pastry. Use a fork to make five or six pricks into the dough within the border of each piece. This will help keep the middle of each piece from rising."

Step Three:
"In a bowl, stir together softened cream cheese, sugar, vanilla and almond extract. Spoon about 2-3 heaping tablespoons of mixture into the middle of each piece of dough and spread around evenly, ensuring the mix stays within the borders. Into the middle of the cream cheese, add blueberries and press down into the cream cheese lightly so they set in place." 

Step Four:
"In a small dish or cup, whisk together the egg and water. Using a pastry brush - brush the edges of the puff pastry with the mixture. This will help the edges turn golden brown and crispy."

Step Five:
"Bake for 20 minutes, or until golden brown, on the middle rack and rotate the baking sheet half way through baking. Remove from baking sheet and cool on a wire rack. Serve warm or room temperature. Sprinkle with powdered sugar before serving."


Snack Like a Southerner: Banana Dippers


2 Bananas
Peanut butter

Step One:
Quarter bananas. Spread peanut butter on top.

Step Two:
Top with raisins, peanuts and granola.

Step Three:
Shave butter over the top.


Snack Like a Southerner: Nutty Chocolate Thumbprints



3 cups pecan halves and pieces 
1 3/4 cups all-purpose flour 
3/4 cup powdered sugar 
3/4 cup cold butter, cubed 
1/4 cup unsweetened cocoa 
1 1/2 cups semisweet chocolate morsels 
3/4 cup firmly packed brown sugar 
3/4 cup light corn syrup 
1/4 cup butter, melted 
large eggs, lightly beaten 
1 cup sweetened flaked coconut

"1. Preheat oven to 350°. Bake pecans in a single layer in a shallow pan 8 to 10 minutes or until lightly toasted and fragrant, stirring halfway through.

2. Line bottom and sides of a 13- x 9-inch pan with heavy-duty aluminum foil, allowing 2 to 3 inches to extend over sides. Lightly grease foil.

3. Pulse flour and next 3 ingredients in a food processor 5 to 6 times or until mixture resembles coarse meal. Press mixture on bottom and 3/4 inch up sides of prepared pan.

4. Bake crust at 350° for 15 minutes. Remove from oven, and sprinkle chocolate morsels over crust. Cool completely on a wire rack (about 30 minutes).

5. Whisk together brown sugar and next 3 ingredients until smooth. Stir in coconut and toasted pecans, and spoon into prepared crust.

6. Bake at 350° for 25 to 30 minutes or until golden and set. Cool completely on a wire rack (about 1 hour). Chill 1 hour. Lift baked bars from pan, using foil sides as handles. Transfer to a cutting board; cut into bars.


German Chocolate-Bourbon-Pecan Pie Bars: For a spirited kick, whisk 1/4 cup of your favorite bourbon into brown sugar mixture in Step 5."

Snack Like a Southerner: Gummy Bear Ice Pops


-Popsicle molds
-Popsicle sticks
-Gummy Bears

Step One:
Fill molds about half way with Sprite.

Step Two:
Add Gummy Bears and stick.

Step Three:
Freeze until forms.


Snack Like a Southerner: Mississippi Tea Cakes


1/2 cup butter
1 cup white sugar
1 egg
1tsp vanilla extract
2 cups flour
1tsp baking powder
1/2tsp baking soda
1/4 cup buttermilk

Preheat oven to 350.

Step One:
In a bowl mix together butter and sugar until they are well blended together.

Step Two:
Add eggs and vanilla to mix.

Step Three:
Mix in flour, baking soda and baking powder. Cream together. Add buttermilk.

Step Four:
Using a spoon, drop scoops onto a baking sheet. (which you may want to cover with sprayed aluminum foil--less likely to have the bottoms burn and less clean up.)

Step Five:
Bake for 8-10 minutes.
