Snack Like a Southerner: Buttermilk Candy

Ingredients:

1 cup buttermilk

2tbs margarine

1tsp baking soda

2 cups pecans, chopped

2tbs butter

2 cups sugar

1tsp vanilla extract

1. In a skillet over high heat, combine buttermilk, soda and sugar. Stir constantly until it reaches a softball size. (5 minutes)

2. Remove from heat. Add mixture, butter, vanilla and nuts to a large mixing bowl. Mix together until thickened and creamy.

3. Spoon out onto buttered or greased wax paper. Let cool.

Snack Like a Southerner: Brown Sugar Fruit Dip

Ingredients

1/2 cup firmly packed brown sugar 
(8-oz.) package cream cheese, softened 
1 cup sour cream 
1 teaspoon vanilla extract 
1/3 cup coffee liqueur (optional) 
1 cup frozen whipped topping, thawed 
Garnish: brown sugar 
Assorted fruit 
1. Beat brown sugar and cream cheese at medium speed with an electric mixer until smooth.
2. Add sour cream, vanilla, and, if desired, coffee liqueur, beating until blended and smooth; fold in whipped topping.
3. Cover and chill 4 hours.
4. Garnish, if desired. Serve with assorted fruit.

Ingredients:

1 cup butter, softened 
1 cup granulated sugar 
1 teaspoon vanilla extract 
large egg 
2 1/4 cups all-purpose flour 
1/4 teaspoon salt 
2 teaspoons meringue powder 
Pink sanding sugar

Preheat oven to 350°

1.Beat butter, granulated sugar, and vanilla at medium speed with an electric mixer until fluffy. Add egg, beating until blended.

2. Combine flour and salt; gradually add to butter mixture, beating just until blended.

3. Divide dough into 2 equal portions; flatten each portion into a disk. Cover and chill 10 minutes.

4. Place 1 dough disk on a heavily floured surface, and roll to 1/8-inch thickness. Cut with a 3-inch heart-shaped cutter. Place 2 inches apart on lightly greased baking sheets. Repeat procedure with remaining dough disk.

5. Bake 10 to 12 minutes or until edges are lightly browned. Let cool on baking sheets 5 minutes; transfer to wire racks, and let cool completely (about 30 minutes).

6. Whisk together meringue powder and 2 Tbsp. water. Brush cookies with mixture, or dip cookies in mixture, and sprinkle with sanding sugar.

For jumbo cookies: Cut rolled-out dough with a 4 1/2-inch heart-shaped cutter. Bake at 350° for 15 to 17 minutes or until edges are lightly browned. Makes: about 1 dozen.

For bite-size cookies: Cut rolled-out dough with a 1-inch heart-shaped cutter. Bake at 350° for 8 to 11 minutes or until edges are lightly browned. Makes: about 20 dozen.

Snack Like A Southerner: Pecan Squares

Ingredients:

2 cups all-purpose flour 
2/3 cup powdered sugar 
3/4 cup butter, softened 
1/2 cup firmly packed brown sugar 
1/2 cup honey 
2/3 cup butter 
3 tablespoons whipping cream 
3 1/2 cups coarsely chopped pecans
Preheat oven to 350°
Crust:
1. Sift together 2 cups flour and 2/3 cup powdered sugar.
2. Cut in 3/4 cup softened butter using a pastry blender or fork just until mixture resembles coarse meal.
3. Pat mixture on bottom and 1 1/2 inches up sides of a lightly greased 13- x 9-inch baking dish.
4. Bake for 20 minutes.
Filling:
1. Bring brown sugar, honey, 2/3 cup butter, and whipping cream to a boil in a saucepan over medium-high heat. Stir in pecans.
2. Pour hot filling into prepared crust.
3. Bake for 25-30 minutes.
4. Cool completely before cutting into squares.
