Snack Like A Southerner: Caramel-Peanut-Popcorn Snack Mix

Caramel-Peanut-Popcorn Snack Mix(myrecipes)

Ingredients:
15 cups
 popped popcorn (about 3/4 cup kernels) 
Vegetable cooking spray 
1 cup plus 2 Tbsp. firmly packed dark brown sugar 
1/2 cup butter 
1/2 cup dark corn syrup 
1/4 teaspoon kosher salt 
1 cup lightly salted dry-roasted peanuts 
Wax paper 
(10.5 oz.) package candy-coated peanut butter pieces (such as Reese's Pieces)
Step One: "Preheat oven to 325°. Spread popcorn in an even layer on a lightly greased (with cooking spray) heavy-duty aluminum foil-lined 13- x 18-inch pan."
Step Two: "Stir together brown sugar and next 3 ingredients in a small saucepan over medium-low heat; bring to a simmer, and simmer, stirring constantly, 1 minute. Pour over popcorn, and stir gently to coat."

Step Three: "Bake at 325° for 25 minutes, stirring every 5 minutes. Add peanuts during last 5 minutes."
Step Four: "Remove from oven, and spread on lightly greased (with cooking spray) wax paper. Cool completely (about 20 minutes). Break apart large pieces, and stir in candy pieces."

Slow Cooker Apple Spice Cake

2 20oz cans apple pie filling
1 Box Spice Cake Mix
8 oz Butter

Step One: "Pour apple pie filling into slow cooker. Top with cake mix and butter."

Step Two: "Cook on high for 2-2.5 hours."

Step Three: Enjoy! Great with vanilla ice cream.

Snack Like a Southerner: Boozy Warm Vanilla Cider

Warm Vanilla Cider

Ingredients:
6 cups fresh apple cider 
2 tablespoons packed dark-brown sugar 
2 whole nutmeg seeds 
1 vanilla bean (split and scraped) 
6 ounces (3/4 cup) bourbon, if desired 
Whipped cream 
Honeyed Walnuts

Step One: "Combine apple cider, dark-brown sugar, nutmeg seeds, and vanilla bean in a medium saucepan. Gently simmer over medium-low heat for 15 minutes."

Step Two: "Remove from heat, and add bourbon if desired. Remove and discard solids."

Step Three: "Divide among 6 mugs or heatproof glasses, and top each with a dollop of whipped cream and a few honeyed walnuts."

Snack Like a Southerner: No Bake Pumpkin Cheesecake Bars

No Bake Pumpkin Cheesecake Bars

Ingredients:
1 ½ cups crushed graham crackers
2 tablespoons sugar
4 tablespoons butter, melted
8 oz. cream cheese, softened
1 can (14 oz.) pumpkin purée
½ cup white sugar
1 tub Cool Whip (8 oz.)
½ teaspoon pumpkin spice
1 teaspoon vanilla extract
1 envelope gelatin, dissolved in ½ cup water

Step One:
"Throw those graham crackers (about one sleeve’s worth) into a plastic bag, and crush them."

Step Two:
"In a large bowl, mix together the crushed grahams crackers, 2 tablespoons of sugar and a half stick of melted butter with a fork."

Step Three:
"Press the buttery graham cracker crumble into some sort of baking dish. I used an 11 x 7 inch dish, but you could honestly use just about anything— even a pie or cake tin would be fine."

Step Four:
"In a bowl, mix together the cream cheese, pumpkin purée, sugar, vanilla and pumpkin spice until well-combined."

Step Five: 
"Then, fold the tub of Cool Whip into the mixture and mix until combined."

Step Six:
"Dissolve your envelope of gelatin into ½ cup of hot water (you could steal some from your roommate’s Keurig) then mix into the cheesecake filling."

Step Seven:
"7. Spoon the cheesecake filling over the graham cracker crust and leave in the fridge for at least 3 hours before cutting the dessert into bars. Enjoy!"

Pumpkin Spice Krispie Treats

A fall twist on a classic and yummy treat! This is really simple to make and is for anyone to enjoy.

Step One:
Gather your ingredients--

-12 cups Rice Krispies
-6tbsp butter
-2 8oz. bags Pumpkin Spice marshmallows
-Brown sugar
-Cinnamon
-Ground Cloves
-Ginger
-Nutmeg
-Powdered sugar

Step Two:
In a large pot combine butter and marshmallows.

Step Three:
Add brown sugar, cinnamon, ginger, nutmeg and cloves. Now, this I did by eye. You can add as much or as little as you like depending on how strong you want the "pumpkin pie" taste to be. Be careful with the sugar, it will make things VERY sticky. Stir.

Step Three:
Add Rice Krispies and stir. Your arm will get tired and you'll get pretty frustrated, but you'll be fine.

Step Four:
Spoon out contents from pot into a foil cake sheet--I like using these because they are disposable and they give the treats a nice shape/depth.

Step Five:
Place treats in freezer to set. While you're waiting for that, make a glaze to put on top. Powdered sugar, butter, a bit of brown sugar and a bit of cinnamon. Microwave the butter until almost liquid, add sugars and cinnamon and whisk together.


Step Six:
Remove treats from fridge and drizzle glaze over top. Place back into the freezer until a half hour until you're about to serve them. The treats will need some time to thaw so you can cut into squares.

quarts apple cider 
1/2 cup molasses 
lemon slices, cut in half 
12 whole cloves 
(2-inch) cinnamon sticks 
1/4 cup lemon juice 
Garnishes: cinnamon sticks,lemon wedges, whole cloves
"Bring cider and next 4 ingredients to a boil in a large saucepan over medium-high heat, stirring occasionally; reduce heat, and simmer 15 minutes.

Remove cinnamon sticks and cloves with a slotted spoon; stir in lemon juice. Garnish, if desired."

Ingredients:

(10-oz.) blocks extra-sharp white Cheddar cheese, shredded
8-oz.) package cream cheese, softened 
(4-oz.) goat cheese logs, softened 
1/2 teaspoon pepper 
Braided pretzel, muscadine vine and leaf 
Crackers and assorted vegetables
"1. Stir together first 4 ingredients. Shape mixture into a ball to resemble a pumpkin. Smooth pumpkin's entire surface with metal spatula or table knife. Make vertical grooves in ball, if desired, using fingertips. Press pretzel into top of cheese ball to resemble a pumpkin stem; place muscadine vine and leaf beside pretzel. Serve with crackers and assorted vegetables.

*Extra-sharp Cheddar cheese may be substituted.

Note: We tested with Cracker Barrel Extra-Sharp Cheddar Cheese. To make ahead, wrap cheese ball in plastic wrap, without stem, vine, or leaf, and store in refrigerator up to two days. Attach stem, vine, and leaf before serving."

(16-ounce) package candy corn 
(15-ounce) package pretzel nibblers 
(12-ounce) package caramel popcorn and peanuts 
(15-ounce) package banana chips 
(15-ounce) package candy-coated chocolate pieces 
(15-ounce) package dried mango 
(15-ounce) package dried pineapple 
(10-ounce) package toffee pretzels 
(6-ounce) package sweetened dried cranberries 
(6-ounce) package worm-shaped chewy candy
"Stir together all ingredients. Store in an airtight container.

NOTE: For testing purposes only, we used pretzel Nuggets, Crunch 'n Munch, M&M's, and Craisins."

"Stir together sugar and 2 quarts water until sugar is dissolved. Stir in remaining ingredients. Chill.

Note: For a scary presentation, place punch bowl into a larger bowl, and add dry ice to larger bowl."
