Snack Like a Southerner: Butter Tarts

Ingredients:
-1 1/2 cups brown sugar
-2 eggs
-1/2 cup butter
-2 cups raisins
-2tbps heavy cream or coffee creamer
-1 cup chopped walnuts
-30 (2 inch) tart sheets

Preheat oven to 325.

Step One:
Combine all ingredients in a large bowl: starting with butter, sugar and eggs.

Step Two:
Arrange tart sheets. Pour batter into shells--no more than half way.

Step Three:
Bake for 20-25 minutes.

Snack Like a Southerner: Gummy Bear Ice Pops

Ingredients/Supplies:
-Popsicle molds
-Popsicle sticks
-Gummy Bears
-Sprite

Step One:
Fill molds about half way with Sprite.

Step Two:
Add Gummy Bears and stick.

Step Three:
Freeze until forms.

Snack Like a Southerner: Mississippi Tea Cakes

Ingredients:
1/2 cup butter
1 cup white sugar
1 egg
1tsp vanilla extract
2 cups flour
1tsp baking powder
1/2tsp baking soda
1/4 cup buttermilk

Preheat oven to 350.

Step One:
In a bowl mix together butter and sugar until they are well blended together.

Step Two:
Add eggs and vanilla to mix.

Step Three:
Mix in flour, baking soda and baking powder. Cream together. Add buttermilk.

Step Four:
Using a spoon, drop scoops onto a baking sheet. (which you may want to cover with sprayed aluminum foil--less likely to have the bottoms burn and less clean up.)

Step Five:
Bake for 8-10 minutes.

Ingredients:
medium  potatoes, cooked and diced
1 1⁄2cups  mayonnaise
tablespoons  cider vinegar
tablespoons  sugar
tablespoon  yellow mustard
teaspoon  salt
teaspoon  garlic powder
1⁄2teaspoon  pepper
celery ribs, sliced
cup  onion, minced
hard-boiled eggs
Paprika

  1. "Boil peeled potatoes in salted water until done. Cool to room temperature.
  2. Place diced potatoes in large bowl.
  3. Mix mayonnaise, cider vinegar, sugar, mustard, salt, garlic powder, and pepper in another bowl.
  4. Add to potatoes.
  5. Add celery and onions and mix well.
  6. Stir in eggs.
  7. Sprinkle a little paprika on top."

Boiled Peanuts

Ingredients:
16 cups raw peanuts in the shell
15 cups warm water
3/4 to 1 cup salt
1 Tbsp. vegetable oil

Step One:
"Rinse the peanuts in cold water. Discard the dirty water. Transfer the peanuts to a 6-quart slow cooker."

Step Two:
"In a large mixing bowl, combine 15 cups of warm water, the salt and oil. Cover the slow cooker with the lid and cook on high for 20 hours. If the slow cooker lid doesn’t fit tightly, check about halfway through the cooking time, and add more water if necessary. Drain the peanuts and serve."

Delicious Okra Fritters

Ingredients:
4 bacon slices, cut crosswise into 1/2-inch strips
2/3 cup finely chopped Vidalia or other sweet onion
1/2 cup thinly sliced okra, about 8 ounces
1 large egg
1 cup well-shaken buttermilk
1 cup fine or medium stone-ground cornmeal
1 tsp. sugar
1/4 tsp. cayenne, or to taste
1 tsp. kosher salt
Vegetable oil

Step One:
"Preheat the oven to 200. Set a wire rack inside a large rimmed baking sheet lined with aluminum foil and place in the oven."

Step Two:
"Cook the bacon in a heavy skillet over medium heat, stirring occasionally, until crisp, about 10 minutes. Transfer with a slotted spoon to paper towels to drain, leaving the drippings in the skillet."

Step Three:
"Add the onion and okra to the skillet and stir to coat in the drippings. Cook over medium heat, stirring, until they begin to soften, about 5 minutes. Remove from the heat, stir in the bacon, and set aside."

Step Four:
"Whisk the egg and buttermilk in a medium bowl until the white and yolk are blended. Whisk in the cornmeal, sugar, cayenne and salt until smooth. Stir in the okra mixture."

Step Five:
"Wipe the skillet clean and add oil to the depth of 1/4 inch. Heat over medium-high heat until shimmering hot. Working in batches, spoon 6 rounded tablespoons of batter into the hot oil. If the first fritter doesn’t sizzle around the edges immediately, the oil is not hot enough and the fritters will be greasy. Cook the fritters until they are firm and golden brown on the bottom, turn them over and cook the other side, about 2 minutes per side. Adjust the temperature to keep the oil hot. Transfer the fritters to the rack in the oven to keep them warm. (The rack lets the warm air circulate around the fritters, which keeps them from getting soddy.) Use a slotted spoon to skim out any debris that’s left in the oil between batches because this will eventually burn and ruin the oil. Continue with the rest of the batter."

Serve immediately.

Yummy! Crispy Cookie Dough Eggrolls

Ingredients:
Chocolate chip cookie dough
Spring roll forms
Vegetable oil

Step One:
Heat oil in a small pot over medium heat.

Step Two:
Take a chunk of cookie dough, about 1.5x the size of a normal cookie dough ball. Roll into a log.

Step Three:
Wrap the cookie dough log in the spring roll form.

Drop wrapped cookie dough into the hot oil. Each roll should take about a minute to cook.
