"Ingredients:
1 ½ c old-fashioned oats (or gluten-free)
1 ½ c rice krispies cereal
¼ c orange juice
1 tsp orange zest
½ tbsp oil
2 tbsp maple syrup
1 egg white, lightly beaten
3 tbsp dried cranberries
2 tbsp chopped pecans

 

Step One:
Preheat the oven to 350°F, and lightly coat a 9” square baking pan with nonstick cooking spray.

Step Two:
In a large bowl, combine the oats and rice krispies cereal.

Step Three:
In a separate bowl, whisk together the orange juice, orange zest, oil, maple syrup, and egg white. Pour over the cereal, and stir with a spatula until evenly coated.

Step Four:
Spread into the prepared pan, and bake at 350°F for 40-45 minutes, stirring every 15 minutes, or until golden and crunchy.

Step Five:
Cool for 5 minutes in the pan before breaking up any large clumps with your fingers. Cool to room temperature; then toss in the dried cranberries and pecans. Store in an airtight container.

**Make sure you stir every 15 minutes! If you wait longer, the granola closest to the edges of the pan will brown too quickly and may acquire a burnt taste. You can also stir every 10 minutes after the first 15 minutes in the oven.

For a vegan version, replace the egg white with an additional 2 tablespoons of orange juice."

Ingredients:

2tbsps cornstarch
2tbsps warm water
2 cups finely diced strawberries
1/4 cup maple syrup
1tbsp granulated sugar
2 and 1/4 cup quick oats (not whole rolled oats)
1 teaspoon ground cinnamon
1 cup unsalted almond butter (can use peanut butter as well)
1/4 cup maple syrup
1/4 cup apple butter*
1 large egg, beaten
1/2 cup sliced almonds

Step One:
Make the strawberry filling first by mixing the cornstarch with the warm water until it all of the cornstarch has dissolved and there are no more clumps. It should resemble milk. Set aside. Combine the strawberries, maple syrup, and sugar together in a small sauce pan over medium heat. Bring to a boil and stir well. Remove from heat and stir in the pre-mixed cornstarch. Whisk until all clumps are gone and set aside to thicken and cool.

Step Two:
Preheat oven to 325F degrees. Line an 8x8 baking pan with aluminum foil with enough overhang on the sides for easy removal. Set aside.

Step Three:
Make the oat crust/topping: In a large bowl, combine the quick oats, cinnamon, almond butter, maple syrup, apple butter, and beaten egg. Mix until all of the oats are moistened and the mixture is thoroughly combined. Reserve 1/2 cup of the oat mixture. Press the remaining oat mixture into prepared baking pan. Make sure it is firmly pressed down and even. Spread the strawberry filling on top. To the reserved 1/2 cup oat mixture, add the sliced almonds. Crumble this over the strawberry filling and, using the back of a spatula, press the topping down firmly into the strawberry filling. You want to make sure it sticks well.

Step Four:
Bake for 25-30 minutes. The topping will be lightly browned. Allow to cool completely before cutting into squares.

Step Five:
Makes 9-12 squares, depending how large you cut them.  Squares stay fresh covered tightly at room temperature or in the refrigerator for up to 5 days.  Bars freeze well, up to 2 months.

Ingredients:
1 large Spanspek melon (balled or cut into cubes)
1lb Prosciutto

Step One:
Tear prosciutto into strips. Stab onto skewer.

Step Two:
Place a melon cube under the meat.

Step Three:
Repeat pattern until skewer is stacked to preference.

Snack Like A Southerner: Hasselback Tomato Caprese

Ingredients:
4 Roma tomatoes
1 pre-sliced log of mozzarella cheese
10 large basil leaves, cut up
1/2 cup balsamic vinegar
1tbsp olive oil
1 pinch coarse salt
1 pinch pepper

Step One:
Slice tomatoes, but not all of the way through.

Step Two:
Slice the mozzarella discs in half in order to fit them into the tomato slits. Stick the mozzarella into the slits of the tomatoes.

Step Three:
Layer a piece of basil with each mozzarella slice.

Step Four:
On the stove, bring the vinegar to a boil until it becomes thick (about four minutes). Drizzle the vinegar and olive oil over the tomatoes. Top with salt and pepper.

Ingredients:
6 hard-boiled eggs
3 tablespoons mayonnaise
1 tablespoon minced shallot
1 teaspoon white vinegar
1 teaspoon mustard
Salt and pepper to taste
Whole black olives

Step One: "Once hard-boiled eggs have cooled, carefully peel off shell and discard. Cut each egg in half vertically, scoop out the yolk and place into a large bowl."

Step Two: "Add mayonnaise, minced shallot, white vinegar, salt and pepper and mustard to the bowl, mix to combine. Add additional mayonnaise and salt and pepper to taste."

Step Three: "Fill each egg half with about 1 tablespoons of filling."

Step Four: "To make spiders, cut the olives in half. Place one half of the olive cut side down in the middle of the egg filling. Cut the rest of the olive into slices vertically. Then, position four olive slices around the olive in the center (to create spider legs)."

Mini "Pumpkin" Cheese Balls

Ingredients:
8 ounces, weight Cream Cheese, softened
¼ cups Finely Chopped Roasted Red Peppers
½ teaspoons Garlic Powder
1 pinch Cayenne Pepper
1 cup Finely Grated Sharp Cheddar Cheese
Paprika, For Dusting
2 whole Green Onions

Step One: "Beat cream cheese, red peppers, garlic and cayenne until well blended. Stir in cheddar cheese."

Step Two: "Refrigerate 2 hours or until firm enough to handle."

Step Three: "Roll into 1-inch balls and then coat in paprika."

Step Four: "Make indents in the side of each one with a knife to make a pumpkin shape (refrigerate longer if needed before shaping with a knife)."

Step Five: "Slice green onion into 1-inch pieces (green parts only). Stick into the top of the cheese ball for a stem. If they are larger green onions you may slice each piece in half lengthwise. Roll each half back into a circular shape and stick into the top of the cheese ball to make it the appropriate size."

Refrigerate until serving.

1 Box Spice Cake Mix
8 oz Butter

Step One: "Pour apple pie filling into slow cooker. Top with cake mix and butter."

Step Two: "Cook on high for 2-2.5 hours."

Ingredients:
6 cups fresh apple cider 
2 tablespoons packed dark-brown sugar 
2 whole nutmeg seeds 
1 vanilla bean (split and scraped) 
6 ounces (3/4 cup) bourbon, if desired 
Whipped cream 
Honeyed Walnuts

Step One: "Combine apple cider, dark-brown sugar, nutmeg seeds, and vanilla bean in a medium saucepan. Gently simmer over medium-low heat for 15 minutes."

Step Two: "Remove from heat, and add bourbon if desired. Remove and discard solids."

Step Three: "Divide among 6 mugs or heatproof glasses, and top each with a dollop of whipped cream and a few honeyed walnuts."

Ingredients:
1/2 cup fine white cornmeal 
1 cup boiling water 
2 tablespoons butter 
1 1/2 teaspoons baking powder 
1/2 teaspoon salt 
1/4 teaspoon black pepper 
3 eggs 
1/2 cup milk 
1 (4 ounce) can chopped green chilies, drained 
1 cup (4 ounces) shredded Mexican cheese blend

Step One: "Preheat oven to 400 degrees F. Coat a 9- x 5- inch loaf pan with cooking spray."

 Step Two: "In a medium-sized bowl, with an electric mixer on medium speed, combine cornmeal, water, butter, baking powder, salt, and pepper for 30 seconds."

Step Three: "Add eggs and milk and beat 1 to 2 minutes, or until thoroughly mixed."
 
Step Four: "Pour half of batter into a prepared loaf pan. Spoon chilies and 2/3 cup of cheese evenly over batter. Pour remaining batter over cheese and top with remaining 1/3 cup cheese." 
 
Bake 20 to 25 minutes, or until golden. Serve warm.

No Bake Pumpkin Cheesecake Bars

Ingredients:
1 ½ cups crushed graham crackers
2 tablespoons sugar
4 tablespoons butter, melted
8 oz. cream cheese, softened
1 can (14 oz.) pumpkin purée
½ cup white sugar
1 tub Cool Whip (8 oz.)
½ teaspoon pumpkin spice
1 teaspoon vanilla extract
1 envelope gelatin, dissolved in ½ cup water

Step One:
"Throw those graham crackers (about one sleeve’s worth) into a plastic bag, and crush them."

Step Two:
"In a large bowl, mix together the crushed grahams crackers, 2 tablespoons of sugar and a half stick of melted butter with a fork."

Step Three:
"Press the buttery graham cracker crumble into some sort of baking dish. I used an 11 x 7 inch dish, but you could honestly use just about anything— even a pie or cake tin would be fine."

Step Four:
"In a bowl, mix together the cream cheese, pumpkin purée, sugar, vanilla and pumpkin spice until well-combined."

Step Five: 
"Then, fold the tub of Cool Whip into the mixture and mix until combined."

Step Six:
"Dissolve your envelope of gelatin into ½ cup of hot water (you could steal some from your roommate’s Keurig) then mix into the cheesecake filling."

Step Seven:
"7. Spoon the cheesecake filling over the graham cracker crust and leave in the fridge for at least 3 hours before cutting the dessert into bars. Enjoy!"
