Snack Like a Southerner: Creamed Cucumbers

Ingredients:
-1 large cucumber
-1tbsp salt
-1/2 red onion, sliced
-1/2 cup plain yogurt or sour cream
-2tbsp sugar
-1tbsp mayo
-1tbsp apple cider vinegar
-1/2tsp ground pepper
-1/2tsp dried dill weed 

Step One:
Slice your cucumbers into thin discs.

Step Two:
In a large bowl, combine onion, salt, yogurt/sour cream, mayo, vinegar, dill and pepper.

Step Three:
Add cucumbers to mixture. Put in refrigerator, covered, for one hour.

Snack Like a Southerner: Macaroni and Cheese with Cheesy Fried Chicken

Ingredients:

Chicken-
Chicken tenderloins
1/2 cup flour
1/2 cup milk
1/4 cup panko bread crumbs
1 egg
Salt
Pepper
1/4 fine shredded cheddar
Pinch paprika

Macaroni and Cheese:
Farfalle noodles
1/3 cup butter
1 1/2 8oz pkgs sharp cheddar cheese
2 cups milk
1/2 cup heavy cream
Salt
Pinch of cayenne pepper
3tbsp flour

Crunchy Topping:
1 cup panko bread crumbs
2tbsp butter
Salt
Pepper
1tsp onion powder
1/2 8oz pkg sharp cheddar cheese

Step One:
Make the chicken.

1. Mix flour, egg, milk, cheddar, salt, pepper and paprika in a large bowl until all flour clumps are gone. 

2. Dump mixture into a large Ziploc baggie.

3. Add raw chicken tenderloins to baggie and shake to coat the chicken.

4. Fry chicken. Add a tablespoon of oil to a large skillet, fry chicken over medium heat (about two to three minutes each side.)

5. Set chicken to the side.

Step Two:
Boil farfalle noodles. Drain and set to side.

Step Three:
Preheat oven to 350.

Step Four:
Make the cheese sauce.

1. In a large pot, melt butter. Add in flour intermittently, stir until all clumps are gone. 

2. Add salt, pepper, and cayenne pepper, mix. Cook until mixture is bubbly.

3. Gradually add milk and cream, stir while adding. Over medium heat, allow mixture to simmer for one minute while stirring.

4. Over low heat, add cheese until melted and combined.

5. Pour cheese sauce over noodles. Mix together.

Step Five:
Make the topping.

1. In a skillet, melt butter. 

2. Add panko bread crumbs. Cook over medium heat, stirring a bit, for about two minutes.

3. Dump mixture in bowl. Cool.

4. Add cheese. Stir.

Step Six:
Dump macaroni and cheese into a large baking dish. Top with topping.

Step Seven:
Bake dish for 20 minutes.

Step Eight:
Remove dish from oven--KEEP OVEN ON. Add chicken to the top of the macaroni and cheese. Sprinkle any left over cheese on top. Place back in oven for 10 minutes.

Snack Like a Southerner: Red Velvet No Bake Cheesecake

Red Velvet No Bake Cheesecake

Ingredients:

16 double stuffed Oreos
3 tbsp unsalted butter, melted
2  8oz pkgs cream cheese
1/2 cup confectioners sugar
8 oz semi-sweet baking chocolate, melted
1 tsp pure vanilla extract
1 1/2 tbsp red food color
1  8oz container whipped topping
Step One:
Crush Oreos into crumbs. You can put them in a large Ziploc baggie and crush them with a rolling pin, or even your foot.
Step Two:

"In a small bowl, mix together cookie crumbs and melted butter. Spoon cookie mixture evenly into small jars or dishes and press to form a crust. Set aside."

Step Three:
"In the bowl of a stand mixer, beat together cream cheese and confectioners sugar until light and blended. Add melted chocolate, pure vanilla extract and red food color and beat until evenly blended. Fold in whipped topping."

Step Four:
"Spoon cheesecake mixture into prepared cups. Alternately, transfer cheesecake mixture into piping bag and pipe into cups. Serve immediately or refrigerate cheesecakes until ready to serve. Top with vanilla whipped topping (see notes) and chocolate shavings."

Copycat Cookin: Tasty Spicy Sesame Cauliflower and Panda Express Lo Mein

These copycat recipes are inspired by Tasty's Spicy Sesame Cauliflower (a rad vegetarian alternative to General Tso's or Orange Chicken) and Panda Express' Lo Mein

Here are a couple of copycat recipes with a twist.

General Tso's Cauliflower

Ingredients:
Cauliflower
1/2 cup flour
1/2 cup milk
1 tsp baking powder
2 tsp garlic powder
1 pin cayenne pepper
Vegetable oil (for frying--you can use any kind of oil, but peanut oil "pops" a lot and you might get "bit" by some hot oil drops, which is never a good time)
1 tbsp minced garlic
1/2 cup soy sauce
1/4 cup rice vinegar
1 tbsp brown sugar
1 tbsp ginger
1 tbsp onion powder
1 tbsp cornstarch slurry

Step One:
Cut up your cauliflower into edible chunks.

Step Two:
In a large bowl combine flour,  milk, baking powder, garlic powder and cayenne pepper. Mix well until clumps are gone.

Step Three:
Add the cauliflower and coat. (You can use a large Ziploc baggie for this as well. Mix all wet ingredients in the large bag and then dump in cauliflower. Shake and coat. No bowl to clean)

Step Four:
Deep fry the cauliflower until golden brown. Drain oil and place cauliflower pieces on a paper towel. 

Step Five:
In a pot, combine minced garlic, rice vinegar, soy sauce, ginger, sugar and onion powder. Bring the sauce to a boil then add the cornstarch slurry to thicken it. Stir.

Step Six:
Toss in cauliflower and coat in sauce over low heat.

Lo Mein

Ingredients:
Ribbon egg noodles (found in any asian food aisle, or you can also use spaghetti)
Broccoli slaw
1 onion (cut up, not minced or diced)
2 stalks celery (cut up into little Us)
2 tbsps ginger
1 tbsp brown sugar
1/4 cup soy sauce
1/4 cup teriyaki sauce
Salt
Pepper

Step One:
Boil and cook noodles. Set aside.

Step Two:
In a small bowl, whisk together soy sauce, garlic, brown sugar, ginger and pepper.

Step Two:
In a large skillet sautee onion, broccoli slaw and celery in some olive oil and a few splashes of teriyaki sauce for about four minutes over medium heat. Heat olive oil in a large skillet over medium high heat. 

Step Three:
Add sauce mixture and vegetables to noodles over low heat. Stir until combined for about three minutes.

Snack Like a Southerner: No Bake Strawberry Almond Cereal Bars

Ingredients:
3tbsp unsalted butter
2 cups mini marshmallows
Pinch of kosher salt
1/4 cup almond butter
1/2tsp vanilla extract
4 cups crispy rice cereal
1 1/4 cup frozen dried strawberries
1/2 cup white chocolate chips

Step One:
"Spray an 8-inch square baking pan and a wooden spoon with cooking spray."

Step Two:
"Melt the butter in a medium saucepan over medium heat. Add the marshmallows and salt and stir with the prepared spoon until the marshmallows have completely melted, about 2 minutes. Stir in the almond butter and vanilla."


Step Three:
"Add the rice cereal and strawberries and stir until the mixture is fully combined. Remove the pan from the heat and let the mixture cool slightly for a few minutes. Stir in the white chocolate chips. (They will melt slightly.)"


Step Four:
"Transfer the mixture to the prepared pan and press into an even layer. Let stand at room temperature until firm, about 20 minutes. Cut into 9 bars. Store at room temperature in an airtight container up to 2 days."

Ingredients:

2 ½ lbs. broccoli florets, cut into bite-size pieces (about 8 cups)
6 tbsp. butter, divided
1 cup finely chopped button mushrooms
¼ cup flour
1 cup whole milk
½ cup half-n-half
½ tsp. salt
¼ tsp. freshly ground black pepper
½ cup Greek yogurt
1 cup finely chopped yellow onion
1 egg
1 ½ cups grated cheddar cheese
1 ¼ cups whole-wheat breadcrumbs 

Step One:
Preheat oven to 350 degrees.

Step Two:
"Bring a large pot of water to a boil. Add broccoli and boil for 4 minutes. Transfer to a colander, rinse with cold water, and drain. Place broccoli in a large bowl."
Step Three:
"Meanwhile, melt 1 tablespoon of the butter in a medium saucepan over medium-low heat. Add the mushrooms and cook until soft, about 4 minutes, stirring occasionally. Transfer mushrooms to the bowl with the broccoli."
Step Four:
"In the same saucepan, melt 4 tablespoons of the butter over medium heat. Whisk in the flour until smooth; cook, whisking constantly, 30 seconds. Whisk in the milk and half-n-half. Bring to a low simmer and continue to whisk constantly until thickened. Remove from the heat and stir in the salt, pepper, and Greek yogurt."
Step Five:
"Pour sauce into the bowl with the broccoli and mushrooms. Add the onion, egg, 1 cup of the cheddar cheese, and ½ cup of the breadcrumbs. Stir to combine. Transfer to the prepared baking dish."
Step Six:
"Melt the remaining tablespoon of butter and stir into the remaining ¾ cup breadcrumbs. Stir in the remaining ½ cup cheddar. Sprinkle breadcrumb topping over the casserole.
Bake for 45 minutes, until filling is hot and bubbly. Check after 30 minutes and cover with foil if topping is browning too quickly. Let stand 10 minutes before serving."

Snack Like a Southerner: Healthy Cheesecake in a Bowl

Ingredients:
1/3 cup part-skim ricotta cheese
1tsp vanilla extract
2tsp agave syrup
Chopped strawberries
Graham crackers

Step One:
In a large bowl, combine ricotta cheese, vanilla extract and half of the chopped strawberries. 

Step Two:
Dollop mixture into a bowl and top with syrup, strawberries and graham cracker crumbles.

Snack Like a Southerner: Spicy Yogurt Hummus

Ingredients:
1/4 cup plain Greek yogurt
1/4 cup hummus
A few dashes of hot sauce (to taste)
Peppers
Carrots
Celery

Step One:
Combine yogurt, hummus and hot sauce. Stir.

Step Two:
Cut up peppers, carrots and celery.

Step Three:
Serve, dip and enjoy!

Snack Like a Southerner: Onion Rings

Ingredients:
Oil for frying (about a quart)
2cups flour
2tsp salt
2tsp black pepper
2tsp cayenne or red pepper
3 egg whites
1cup milk
1tbsp white vinegar
3 large sweet onions sliced into thick rings

Step One:
In a large skillet, heat up the oil on medium-high heat. If you're using a deep fryer, good for you, and heat it up to 375.

Step Two:
In a LARGE Ziploc baggie, combine flour, salt, pepper and cayenne. In a second LARGE Ziploc baggie, combine egg whites, milk and vinegar.

Step Three:
Drop rings into the "wet" bag. Close it up and shake around, coating the rings.

*Now if you don't want to really get your hands nasty, then I would suggest cutting a hole in the corner of the bag and draining the wet mixture into the sink, leaving only the onions in the bag. Once the bag is mostly empty, then you can just dump the wet onion rings into the "dry" bag in Step Four.*

Step Four:
Remove the wet rings from the "wet" bag. Place the rings in the "dry" bag. Shake and coat again.

*Now if you don't want to really get your hands nasty again, I would suggest laying the bag flat down and cutting off the front of the bag. That way you can pick the rings up off of a flat surface instead of sticking your hands in the bag.*

Step Five:
Pick onions out of dry bag and fry em up! Perhaps three to four at a time in the pan. Place a paper towel on the counter next to the stove so you can place the onion rings on it to soak up the grease. Use tongs to pick the rings out of the pan. Fry them until golden brown.

Enjoy!

Sauces:
Onion rings go well with A LOT (ketchup, mayo, etc)
However, I find mixing up some blue cheese dressing and thousand island dressing to be pretty yummy!

Snack Like a Southerner: Cornbread Stuffing

Ingredients:
2 8.5oz pckgs dry corn muffin mix
1 8oz can cream corn
2 eggs
1/2cup plain yogurt
1/4cup milk
1/2cup butter
1 onion
2 celery stalks
1 green bell pepper
4 cloves garlic
2tsp thyme
1tsp basil
2tsp oregano
2tsp salt
1tsp black pepper
1/4tsp cayenne pepper
3cups chicken broth

Step One:
Preheat oven to 400°. Finely chop bell pepper, celery and onion, mince garlic set aside. Beat eggs in a large bowl.

Step Two:
In the egg bowl, combine corn muffin mix, cream corn, yogurt and milk. Stir and pour into a lightly greased 9x13in pan.

Step Three:
Bake for 20 minutes. Meanwhile, in a large 
saucepan melt butter and sauté pepper, celery, onion and garlic over medium heat.

Step Four:
Once onions are tender, stir in thyme, basil, oregano, salt, black pepper, cayenne and broth. Bring to a boil. Remove from heat.

Step Five:
Crumble the cornbread into mixture in pan, mix well. Enjoy!
