Snack Like a Southerner: Macaroni and Cheese with Cheesy Fried Chicken

Ingredients:

Chicken-
Chicken tenderloins
1/2 cup flour
1/2 cup milk
1/4 cup panko bread crumbs
1 egg
Salt
Pepper
1/4 fine shredded cheddar
Pinch paprika

Macaroni and Cheese:
Farfalle noodles
1/3 cup butter
1 1/2 8oz pkgs sharp cheddar cheese
2 cups milk
1/2 cup heavy cream
Salt
Pinch of cayenne pepper
3tbsp flour

Crunchy Topping:
1 cup panko bread crumbs
2tbsp butter
Salt
Pepper
1tsp onion powder
1/2 8oz pkg sharp cheddar cheese

Step One:
Make the chicken.

1. Mix flour, egg, milk, cheddar, salt, pepper and paprika in a large bowl until all flour clumps are gone. 

2. Dump mixture into a large Ziploc baggie.

3. Add raw chicken tenderloins to baggie and shake to coat the chicken.

4. Fry chicken. Add a tablespoon of oil to a large skillet, fry chicken over medium heat (about two to three minutes each side.)

5. Set chicken to the side.

Step Two:
Boil farfalle noodles. Drain and set to side.

Step Three:
Preheat oven to 350.

Step Four:
Make the cheese sauce.

1. In a large pot, melt butter. Add in flour intermittently, stir until all clumps are gone. 

2. Add salt, pepper, and cayenne pepper, mix. Cook until mixture is bubbly.

3. Gradually add milk and cream, stir while adding. Over medium heat, allow mixture to simmer for one minute while stirring.

4. Over low heat, add cheese until melted and combined.

5. Pour cheese sauce over noodles. Mix together.

Step Five:
Make the topping.

1. In a skillet, melt butter. 

2. Add panko bread crumbs. Cook over medium heat, stirring a bit, for about two minutes.

3. Dump mixture in bowl. Cool.

4. Add cheese. Stir.

Step Six:
Dump macaroni and cheese into a large baking dish. Top with topping.

Step Seven:
Bake dish for 20 minutes.

Step Eight:
Remove dish from oven--KEEP OVEN ON. Add chicken to the top of the macaroni and cheese. Sprinkle any left over cheese on top. Place back in oven for 10 minutes.

Red Velvet No Bake Cheesecake

Ingredients:

16 double stuffed Oreos
3 tbsp unsalted butter, melted
2  8oz pkgs cream cheese
1/2 cup confectioners sugar
8 oz semi-sweet baking chocolate, melted
1 tsp pure vanilla extract
1 1/2 tbsp red food color
1  8oz container whipped topping
Step One:
Crush Oreos into crumbs. You can put them in a large Ziploc baggie and crush them with a rolling pin, or even your foot.
Step Two:

"In a small bowl, mix together cookie crumbs and melted butter. Spoon cookie mixture evenly into small jars or dishes and press to form a crust. Set aside."

Step Three:
"In the bowl of a stand mixer, beat together cream cheese and confectioners sugar until light and blended. Add melted chocolate, pure vanilla extract and red food color and beat until evenly blended. Fold in whipped topping."

Step Four:
"Spoon cheesecake mixture into prepared cups. Alternately, transfer cheesecake mixture into piping bag and pipe into cups. Serve immediately or refrigerate cheesecakes until ready to serve. Top with vanilla whipped topping (see notes) and chocolate shavings."

Broccoli Casserole from Scratch

Ingredients:

2 ½ lbs. broccoli florets, cut into bite-size pieces (about 8 cups)
6 tbsp. butter, divided
1 cup finely chopped button mushrooms
¼ cup flour
1 cup whole milk
½ cup half-n-half
½ tsp. salt
¼ tsp. freshly ground black pepper
½ cup Greek yogurt
1 cup finely chopped yellow onion
1 egg
1 ½ cups grated cheddar cheese
1 ¼ cups whole-wheat breadcrumbs 

Step One:
Preheat oven to 350 degrees.

Step Two:
"Bring a large pot of water to a boil. Add broccoli and boil for 4 minutes. Transfer to a colander, rinse with cold water, and drain. Place broccoli in a large bowl."
Step Three:
"Meanwhile, melt 1 tablespoon of the butter in a medium saucepan over medium-low heat. Add the mushrooms and cook until soft, about 4 minutes, stirring occasionally. Transfer mushrooms to the bowl with the broccoli."
Step Four:
"In the same saucepan, melt 4 tablespoons of the butter over medium heat. Whisk in the flour until smooth; cook, whisking constantly, 30 seconds. Whisk in the milk and half-n-half. Bring to a low simmer and continue to whisk constantly until thickened. Remove from the heat and stir in the salt, pepper, and Greek yogurt."
Step Five:
"Pour sauce into the bowl with the broccoli and mushrooms. Add the onion, egg, 1 cup of the cheddar cheese, and ½ cup of the breadcrumbs. Stir to combine. Transfer to the prepared baking dish."
Step Six:
"Melt the remaining tablespoon of butter and stir into the remaining ¾ cup breadcrumbs. Stir in the remaining ½ cup cheddar. Sprinkle breadcrumb topping over the casserole.
Bake for 45 minutes, until filling is hot and bubbly. Check after 30 minutes and cover with foil if topping is browning too quickly. Let stand 10 minutes before serving."

DIY: Backyard Luau Favors

Step One:
Gather your supplies. (This can total vary depending on what you want to put in there and what your budget is like. These supplies in total would cost about $5 all together, but I bought a couple of things in bulk.)

Step Two:
Pack it in!

DIY: Ripped Tee To Keep Cool! Part 1

Step One:
Gather your supplies
-tshirt
-scissors

Step Two:
Lay out your shirt. Cut a half circle around the base of the shirt.

Step Three:
Place a strip of tape across the top in order to create a line.

Step Four:
TEAR IT UP! This was hard and not very fun to do with a cruddy pair of scissors. If you have a box cutter, Xacto knife or a sharp pair laying around, you'll have a much better time. The idea here is to strip it and tatter the bottom half of it.

DIY: Buttons on Canvas

Step One:
Gather your supplies.
-Canvas
-Hot glue
-Hot glue gun
-Buttons of all shapes and sizes (color is all preference)

Step Two:
Sketch out your design before putting buttons down. I did this in Sharpie and immediately regretted it. Do it in pencil if you can!

Step Three:
Plug in your hot glue gun and put buttons down!

DIY: Redneck Couture Cookies

These make for excellent housewarming gifts or quick and easy emergency party favorites! These jars are pre made cookies for quick and easy baking. These recipes are originals that have been inspired by Redneck Couture's Boot Bling

Step One: Gather your materials!


-mason jar
-cookie ingredients
-measuring utensils
-paper towels

Couture Cookie #1: The Sue Ellen
Oatmeal Toffee Cookies

Ingredients:
(for the jar)
3/4 cup flour
1 cup rolled oats
1/2 tsp baking soda
1/4 tsp salt
3/4 cup brown sugar
1/3 cup crushed Werther's Original candy

1/4 cup (half stick) butter
1 tsp vanilla extract
1 egg

Unwrap your candies. CRUSH 'EM. This can be done a variety of cleaner ways, but I took a meat mallet to these lil guys. It worked, but it was a bit of a mess. I suggest putting the candies in a ZipLoc baggie before crushing them, that way, all of the pieces stay in the bag.

Place your jar on the paper towel, this will come in handy. Measure out your dry ingredients. Pour them one by one into the jar, stacking style. Start with the largest quantities first, or if you want to make it look artsy you can stack them by color. 

Whatever doesn't make it into the jar, pour off of the paper towel into the jar. It's easier to use the paper towel as a funnel than pouring the ingredients in straight.


Print out the recipe card and you're done!

Couture Cookie #2: The Anna
Bourbon-Cranberry-Walnut-White Chocolate Cookie

Ingredients:
(for the jar)

1 1/4 cup sugar
1/2 cup brown sugar
1 3/4 cup flour
1 tsp baking soda
1/4 tsp salt
3/4 cup dried cranberries
1/2 cup walnut pieces
1/4 cup white chocolate chips (optional) 

1 tsp vanilla extract
1/2 cup (one stick) butter
1/4 cup bourbon

Place your jar on the paper towel, this will come in handy. Measure out your dry ingredients. Pour them one by one into the jar, stacking style. Start with the largest quantities first, or if you want to make it look artsy you can stack them by color. Whatever doesn't make it into the jar, pour off of the paper towel into the jar. White Chocolate Craisin Oatmeal Cookies

1/3 cup white chocolate chips

1/4 cup butter (half stick)

DIY: Custom Burlap Table Runner

Step One:
Gather your materials.

-burlap
-black fabric paint
-paint sponge
-stencils

Also, if your burlap hasn't been cut to your needs yet, trim it! 

Step Two:
Pour paint onto some old newspaper. Place another piece of paper under your burlap so you don't get paint on the table.

Step Three:
Prep your stencils. Now, place your stencils on and paint!

Step Four:
Let it dry and you're done!
